Sea bass such as other kinds of fish needs a dry white wine to drink with.
Sea bass is just perfect with Sancerre, specially if the fish is cooked with an hollandaise sauce.
Sea bass is recommended with a sauvignon wine such as Sancerre, Pouilly fumé or white Graves.
A Chardonnay wine or even a Riesling wine can also pair with sea bass.
